When my avô (grandpa) was younger, he served in the Portuguese military.
During his time, he was stationed in Guinea, Africa. While he was there, some of the locals taught him a recipe for a meat marinade they often used. He brought it back home with him and It's been a family favorite ever since! You can use it for a lot of different things (chicken, beef, ribs) but my personal favorite is thin-cut, bone-in pork chops. The marinade gives the meat such a vibrant and delicious flavor!
Unless we're following a specific recipe, this is typically how my family marinades our meat.
INGREDIENTS:
Paprika
Sliced fresh garlic cloves
Crushed red pepper
Bay leaves
Salt
Pepper
White wine vinegar
Extra Virgin Olive Oil
Garlic powder
Lemon juice
Like any marinade, the longer you season the meat, the more tender and flavorful it will be. I hope it adds some flavor to your dinner life! Happy cooking, enjoy!
Sending love always,
J.S.
